Read Our Story

At Stave & Steel, we celebrate the american heritage of innovation and craftsmanship with a winemaking approach that’s bold and unconventional.

Progress is always our first priority—which is why we’ve embarked on a new barrel-aging experience. We begin by sourcing American oak bourbon barrels. The wooden staves are toasted and charred prior to aging to enhance the wine’s natural aromas and add flavor dimension, imparting distinct bourbon characteristics into our wine. Their staves are saturated with bold, lingering flavors that merge artfully into our varietals as they age. Each wooden stave delicately steeps the wine and creates an elegant fusion of flavor.

Read More About Our Wine

We began by sourcing American Oak Barrels that had been toasted, charred, and drenched in Kentucky Bourbon.

Our Paso Robles Cabernet Sauvignon is then added and aged for four months, imparting additional layers of complexity, depth and flavor. The result is a refined, full-bodied Cabernet with bold fruit flavors. Dark cherry, blackberry and plum enrich the palate, providing excellent structure and generous tannins.

The bourbon influences add notes of vanilla, caramel, and spice that lead into a long, smooth finish.

The Winemaker

We know America wasn’t born.

It was built.

Meet Our Maker

Meet James Foster

Following in my father’s footsteps, I moved from my hometown of Eufaula, Alabama to join the California Wine industry. During my early years, I traveled extensively, made a variety of wines, and studied expressive wine styles. Now, 20 years into my career as a winemaker, I continue to enjoy pushing the envelope, innovating and experimenting with new wine styles.

After two years of hard work and experimentation, I’m proud to introduce Stave & Steel Bourbon Barrel Aged Cabernet, where 100% of our Cabernet is aged in bourbon barrels for four months.

This is winemaking reinvented, and I’m just getting started.
